Are you asking for something like this? I have added support for fixed-position items in one of the latest releases but I didn't have time to complete docs yet. You can take a look at the examples in the PR description and let me know if that's something you are looking for.

You have an example usage there as well that you can look at. In short, you need to use the Sortable.Handle component and set the mode to fixed on items which shouldn't be reordered.
