Add ability to set metadata / infer them from the course metadata

Currently the only metadata that is set are the title (= filename) and the series. The title is actually editable on upload, but it probably comes somewhat unexpected for presenters. Other metadata might be inferred from the Moodle course. It might make sense to set the speaker to the username of the uploader.
