In the configuration i added 'enum': 'string'
but i can't see any changes in the enum data type why is this and is there any alternative way to do that?

Did you tried to restart replication from scratch? For mappings to apply you need to run replication from scratch again (remove internal storage directory, the one which is set in binlog_replicator data_dir config setting.
