Use `OPENSEARCH_INITIAL_ADMIN_PASSWORD` environment variable introduced in OpenSearch 2.12

When updating the docker images, we should also slightly update the docker-compose definitions to use use the OPENSEARCH_INITIAL_ADMIN_PASSWORD which will make it easier to setup new installations (compared to the current workflow in 2.4, as linked in the README.).
