Freeze Plotly verison to requirements.txt

Can we freeze the plotly version 5.x to requirements? Explainerdashboard is not compatible with plotly 6.0 which was released this year. It was causing issues until I realized my plotly version was mismatched.

Recommend to freeze requirements for

1. dash < 3 (due to the update of app.run_server to app.run)
2. dash-boostrap-components <2 (due to right = True no longer exists)

Not so sure if there's any other impacted libraries due to the update.
