Updating ECS version from 1.12.1 to 8.x ? #272

Hello, do you plan any further update regarding the ECS version that is integrated in this plugin ? I'm looking forward to be able to generate ECS 8.x logs in my quarkus project but it seems like you are still using a ECS 1.12.1 version. Thank you !
