Migrate to SvelteKit + Flatbread

Problem

Gridsome is unmaintained and caused many headaches around pieces I'd like to incorporate into the application. The main utility gained from Gridsome was the relational, flat-file data source surfaced via GraphQL, and secondary to that was Gridsome's static site generation.

Proposed Solution

Migrate to Flatbread as a framework-agnostic, relational, flat-file GraphQL data layer & SvelteKit to achieve static site generation without lock-in, providing the ability to easily switch target build.
